Our Pastry Chef
Chef Ericha's passion for baking began when she was three years old, and spent hours flipping through issues of Southern Living and Good Housekeeping, paying special attention to the recipes for cakes and cookies. Her Grandmother, a retired baker who specialized in wedding cakes, introduced her to the basics of making amazing cakes and cookies. Ericha's childhood was spent crafting sweet treats for her family and friends, with her father and brother serving as her chief taste testers!
After building a successful career as a consultant, Ericha longed to return to her first love of baking. She enrolled at Le Cordon Bleu College of Culinary Arts in Orlando, where she completed a degree in classical pastry arts and graduated with honors. Her drive to learn all she could about pastry led her to become a chocolatier at David Ramirez Chocolates, where she honed her passion for quality and flavor under the tutelage of Executive Pastry Chef/ Creative Director David Ramirez and owner Nicole Ramirez.
Now, Ericha applies her passion and creativity as the Executive Pastry Chef of The Clever Cookie. When she's not baking custom orders for clients, her time is spent experimenting and developing new recipes. Her work reflects an appreciation for both classical pastry and childhood treats, and a dedication to innovation. Look for her "family favorites" throughout the menu!
